Spreads are easy to prepare and taste great.  I like them on crackers, wraps, lettuce, red pepper, cucumber and in Nori Rolls, with sprouts on top.  Try various herbs and spices, and you’ll enjoy a different spread each time. 

Extra Prep Time:  soak walnuts 4 to 8 hours  
Quantity:  1 cup                                                                                                                                                                                                         

- 1 cup walnuts (to soak)
- 1 clove garlic (cut in half)
- 1 stalk celery (cut in 1” chunks = approximately 1/2 cup)
- 1/4 teaspoon sea salt
- 1 teaspoon curry
- 1 teaspoon olive oil
- 1 tablespoon lemon juice

  • Soak walnuts 4 to 8 hours.  Drain and rinse.
  • Process walnuts and other ingredients in food processor until it becomes paste-like.   Stays fresh in fridge for several days. 


Instead of curry, add a dash of cayenne, plus an herb or spice such as basil, cilantro, cumin, dill, ginger, Italian spices, oregano, rosemary or thyme.  If dried, use 1-2 teaspoons.   If fresh, use 2-3 tablespoons.
