CAN’T BEET THAT SALAD

This is one of my favourite salads and it’s so easy to make.

Extra Prep Time: None.
Quantity: 1 3/4 cups

Ingredients:
- 2 medium beets (peeled and grated)
- 1 1/2 tablespoons apple cider vinegar
- 1/8 teaspoon sea salt
- 1 avocado (cut in 1/2” to 3/4” pieces)

1) Combine beets, vinegar and salt in a bowl.
2) Gently stir avocado pieces into beet mixture.
